Creamy Avocado Dressing
An easy, creamy avocado dressing perfect for salads or to use as a healthy dip.

- 1 large avocado ripe
- 2 limes fresh juice
- ⅓ bunch cilantro freshly chopped to equal approx. ⅓ cup
- ¼ cup olive oil extra virgin
- ¼ cup water
- 1 clove garlic peeled
- 1 tsp kosher or sea salt to taste
- black pepper to taste
- 1 dash smoked paprika optional, to taste.
Remove seed from avocado and place the flesh in a blender.
Squeeze the juice from both limes over the avocado flesh.
Chop the cilantro leaves and stems and place in blender.
Add olive oil, water, garlic, and salt to the blender.
Blend well, adding additional water if needed for desired consistency.
Add additional lime juice, salt, pepper, and smoked paprika to taste.
Store leftovers in airtight container for up to 3 days.
