  3. Salads:  Add sliced avocados to salads for a creamy texture and a boost of healthy fats.

Easy Creamy Avocado Dressing

Creamy Avocado Dressing

An easy, creamy avocado dressing perfect for salads or to use as a healthy dip.

Ingredients

  • 1 large avocado ripe
  • 2 limes fresh juice
  • bunch cilantro freshly chopped to equal approx. ⅓ cup
  • ¼ cup olive oil extra virgin
  • ¼ cup water
  • 1 clove garlic peeled
  • 1 tsp kosher or sea salt to taste
  • black pepper to taste
  • 1 dash smoked paprika optional, to taste.

Instructions

  • Remove seed from avocado and place the flesh in a blender.
  • Squeeze the juice from both limes over the avocado flesh.
  • Chop the cilantro leaves and stems and place in blender.
  • Add olive oil, water, garlic, and salt to the blender.
  • Blend well, adding additional water if needed for desired consistency.
  • Add additional lime juice, salt, pepper, and smoked paprika to taste.
  • Store leftovers in airtight container for up to 3 days.
