Eating Well: Easy Ways to Eat More Fruits and Veggies!

Eating well is critical for good health and is possible with the right education and guidance.   The National Institute of Health recommends adults consume 5 fruits and vegetables daily.  However, it is estimated that 90% of Americans don’t meet this recommendation.  Imagine, that is only 1 out of 10 people eating 5 fruits and veggies a day!  As a society, we can definitely improve these numbers!   

I recently met Kristina McInerny (Kris) and was immediately drawn to her story.  She has graciously agreed to share some of her wisdom and personal experience at Harvesting Health and Happiness blog.  I am thrilled to welcome her on board and am sure my readers will enjoy her content.  Without further ado, continue reading to learn more about her knowledge of eating well and beyond!

Hello, I’m Kristina (Kris) McInerny. Candy has kindly allowed me to post health blogs on this site. I will be recommending one new veggie, healthy drink or food item that will open your mind to eating more than just the same 5 side items (stop and think about the veggies or sides you’ve eaten in the past 3 days).  Specifically, I will start with the color green for the next 4 articles just to get you started. I have many more future items selected, so maybe keep a running list on your fridge or digital device. 

My health and personal background is below. I hope you enjoy and share these with friends or family.

Eating Well:  I Love Veggies!

When I tell people I have a love affair with vegetables and can talk about healthy eating for an hour, they think I’m crazy.  I hear: “I don’t like vegetables that much” or “Ewww – that stinks when you cook it!” or “there aren’t enough veggies I like and I get sick of salad”.   I’m literally LOLing (laughing out loud) as I write this.    I’ve learned to be gracious and to (sometimes) curb my sarcasm.  After all, shouldn’t EVERYONE want to hear about healthy living and eating well ALL THE TIME?!  I do!!

More About My Background and Passions

eating wellI’m a former programmer, web developer and IT project manager by trade, now retired. I’ve been diabetic for 25 years. I’ve learned over many years how to maintain my health while controlling my hba1c numbers. I wanted to share my journey, so a few years before retirement I started a Facebook account called Healthy Diabetes Management.  I spoke to business groups about reading food labels. Particularly, the importance of putting healthy ‘fuels’ in your system by tweaking unhealthy habits into healthy habits. Unfortunately, I wasn’t able to quit and replace my IT salary to teach something I’m passionate about: health. 

Eventually, I found Optavia(R)’s health program, which helps over 2 million people learn healthy habits.  I read the books, took the workshops, tried the food and found it to be effective at leveling out my a1c.  I’m in maintenance mode now, having found a good balance.  I am thriving with diabetes and excited to help others on their journey!  They have a health program (it’s not just about food) and a plethora of marketing materials that stated exactly what I wanted to teach.  This was perfect for me – I could help people instead of trying to create marketing materials, etc.  To be legally compliant, I am an Independent Certified Optavia Coach.  

Looking Ahead:

I am looking forward to helping you open your mind to the amount of good food that’s out there that might not be top of mind for you.   Be on the lookout for my first article in the next weeks!

Fast-forward to current times.  I live in Reserve at Heron Pond, I volunteer at the COA Thrift Store in Hendersonville, NC and I attend Candy’s fitness classes.  I love having an active community to keep me accountable, don’t you?
